In the future try this method of cooking potatoes. Boil them in chicken stock until they soften, then put them on a shallow baking pan and toss them into a 400F oven until they start browning. Never wrap them in foil. many roast potato recipes use chicken stock in the recipe.....i'm gonna try this but that is a lot of chicken stock....i have to boil taters for 3 plus dogs need leftovers

After removing the potatoes toss in some brown rice. It's calorie dense and dog safe as long as you avoid garlic, nightshades and onions. My butcher, a short woman from Nanakuli, always puts odd cuts aside for me. Ribs are the most labor intensive to debone. Since dogs don't mind a little gristle-liscious chewyness, I can use a filet knife and it comes out in manageable strips, which often go into the soup as its boiling. For the moment I am having to bark orders to daughter unit. They're her freakin pound puppies, not mine. I keep them healthy because it's cheaper than today's vet bills.

I'm hungry and reading this isn't helping. lol That's ok...I like being really hungry before eating supper. I'm going to make some tuna fish salad and heat up what is left over from sides I bought yesterday - mac n cheese and green beans. In this house we always called a good tasting, thrown together from different things meal as a John Brown meal...this will be a John Brown supper. I listened to that Hank Williams vid that Irminsul posted. tbh I listened to some of it. No doubt he is an acquired taste.

We were forced by water to remodel the kitchen down to the studs and flooring a few years back and I made some changes. Firstly, a gas convection oven. Then a range filter hood to suck the stench out. And lastly, I upgraded our water filtration. I swear by a convection oven when I want to cook salmon. But the most insane thing I do is rapid smoking in the convection mode. I put an aluminum baking pan on the oven floor and cover it with soaked hardwood chips. The meat, usually Boston Butts or Brisket, goes onto a wire rack in another aluminum pan and then onto the middle rack of the oven. Then I set it to convect at 575F. In about 15 - 20 minutes smoke comes from the oven exhaust vent. The fan starts when the heat is set. For about a half hour the oven is so thick the 40W bulb appears dark orange. Opening the oven door would be a serious mistake, the smoke would literally jump out at you (experience). Then the temp goes down to 275F and cooks until the meat is above 160F. Then it gets a second high temp smoke treatment. Then set the oven back to 275F until the meat falls from the bone. You'll swear it was cooked outdoors all afternoon. I don't do this during the summer!
