LOW CARBOHYDRATE JALAPENO CREPES Low Carb, Keto friendly spicy crepes with a sweet cream cheese and bacon filling Ingredients crepes
4 eggs 4 oz cream cheese (room temperature) 1 tbsp. butter 2 tsp sugar substitute ( I used Sukrin) 3–4 tbsp. finely diced pickled jalapenos filling
4 oz cream cheese (room temperature) 4 strips cooked bacon 1 tsp vanilla 1–2 tsp sugar substitute Instructions for crepes
Combine eggs, cream cheese, butter and sugar substitute in blender until smooth. mixture will be liquidy In non stick pan over medium low heat, pour small portion of the mixture Cook as you would a pancake, it will be thin like traditional crepes Instructions for filling
Mix cream cheese, sugar sub and vanilla. Beat until fluffy and fold in crushed cooked bacon Place desired amount of filling into crepe and roll/fold gently notes Easy to meal prep Store cream cheese and crepes separately Reheat crepe in pan over low heat or microwave for 30 seconds Cream cheese must be warm to fully combine with egg in blender

I don't have a precise recipe for this, but it's simple enough; Jalapeno Peppers stuffed with cooked shredded chicken and broiled or fried. I use large peppers, 7-11cm or larger. Cut the top off and remove the seeds and hollow out each pepper. Your shredded chicken can't be dripping in grease or the pepper will cook weirdly, as if a plant-based test tube. Spousal unit mixes the chicken with parmesan before packing it into the peppers. I usually cook them in a steel pan with just enough peanut oil for good heat transfer. They have to be turned nearly constantly and you have to make sure the chicken doesn't leak out. When the pepper is less rigid and carrying a few burned spots, pull it out and let it cool a little. Get something to chase it with. I suggest beer.
